Removing water vapor from the air so evaporation can keep happening, which is the half of drying that airflow alone cannot do.
If air movers are the accelerator on a drying job, dehumidifiers are the drain. Evaporation only continues while the surrounding air can accept more moisture, so without dehumidification the room air saturates and the drying stalls, with the added water condensing on whatever surface in the house happens to be coolest. That is how one wet room becomes several damp ones.
Two technologies do the job. Refrigerant machines pull room air over a cold coil, condense water out of it, and return warm dry air to the space. Low grain refrigerant units add a pre-cooling stage so they keep extracting water even after the air has become fairly dry, which matters because the last stage of drying is the slow one. Desiccant machines pass air over a moisture-adsorbing wheel instead, reaching lower humidity than refrigerant units and making them the tool for hardwood, plaster, masonry, and large commercial spaces.
Household air conditioning is not a substitute. It cools and incidentally dehumidifies, and in a South Florida summer it spends much of its capacity on outdoor air infiltrating every time a door opens. A dedicated dehumidifier removes far more water per day, discharges dry air back into the space, and can be metered so you know it is working.
Sizing comes from the volume of the affected space, the class of the loss, and the materials involved. Verification comes from readings: the moisture content of the air entering the machine compared with the air leaving it. A wide split means the unit is pulling water. A narrow one means it has filled, iced, failed, or is undersized for the load.
The most common thing a homeowner can do to help is also the most counterintuitive in Florida: keep the affected area closed. Outdoor air here typically carries more moisture than the conditioned air inside the drying chamber, so opening up adds water back into the space.
