Category is the first thing a restorer establishes on a water loss, because it sets the safety plan, the containment, the personal protective equipment, and above all what gets saved. The S500 standard grades water on contamination in three steps. Category 1 originates from a sanitary source. Category 2 contains significant contamination with the potential to cause discomfort or sickness on contact or ingestion. Category 3 is grossly contaminated and can contain pathogenic, toxigenic, or otherwise harmful agents.
The practical consequence is material loss. Category 1 water in a room means most assemblies can be dried in place with air movement and dehumidification. Category 3 water means the porous materials it touched are contaminated all the way through and get removed, bagged, and disposed of. No amount of drying makes a sewage-soaked carpet pad sanitary again.
Category is also not fixed. Clean water sitting on organic building materials at Florida indoor temperatures degrades: the material feeds microbial growth, and what began as Category 1 becomes Category 2 or 3. This is the single biggest reason the industry pushes for same-day response, and the reason a delayed claim often has a much larger scope than the original leak would suggest.
On arrival, a technician traces the water to its source before writing a scope. A burst copper supply line above a ceiling is Category 1. A washing-machine discharge hose or a dishwasher overflow is normally Category 2 because of detergents, soils, and food waste. A toilet backflow past the trap, a sewer backup, or ground-surface water pushed in by a storm is treated as Category 3.
The category appears on the moisture documentation and on the scope, and it is the line most scrutinized, because it justifies demolition. If a scope removes drywall two feet up across a whole floor, the category and the moisture readings are what support it. Photographs of the source, of standing water, and of the affected materials before removal are what make that defensible later.
